present from dad


willy and i went to my dads for dinner last night. he had just picked up some of the best sweet corn we have had all summer! he gifted us 14 ears....woohoo.... corn party! i took some time decided on how best to use my new gift. i decided i would freeze a few bags to use later and use a couple ears on something fresh. i used some in this killer crepe recipe i've been waiting to try out!

8 crepes
2 chicken breasts, cooked and diced
2 small peppers, diced
1/2 onion, diced
1 1/2 cup sweet corn
1/4 cup cream cheese
parmesan cheese
olive oil
salt and pepper
garlic powder


saute veggies in olive oil, stir in chicken, seasonings and cheeses. wrap mixture in crepes. serve immediately or freeze for later.

  1. yum! did you make the crepes yourself? they seem hard and scare me, but I DO love crepes.

    My aunt freezes corn at the end of summer and saves it for Thanksgiving! I think it's a good idea b/c you have the best corn on Thanksgiving.

  3. yep, i made the crepes. that are easy once you get the hang of it! we can have a crepe night next month!
